Have fun with this! If you have any veggies left over from lunch, feel free to use them!
½-1 can of black beans (No or low sodium, especially for those with hypertension)
A few fresh grape tomatoes (cut into halves or fourths)
Any other veggies that you’d like to top your tostada with!
SPICES (optional): Chili powder, Cumin, Onion powder, Garlic powder OR fresh garlic minced
- “Refry” your beans by heating them with a little veggie broth (approx 2 tbsp) in a medium sized pan. Add more veggie broth if needed. Let the beans simmer and add in some spices of your choice. The spices above are often used in refried black bean recipes.
- Smash the beans using a potato masher or fork. When your beans have reached your desired consistency, add them to your tostadas and top with cubed avocado and sliced fresh tomatoes.
- If desired, top with any other leftover veggies or saute any vegetable of your choice!
